Bōkan was a ground-breaking project for Accor Hotels, whereby we were given the opportunity to develop a concept that would occupy the top 3 stories of a custom-built skyscraper in Canary Wharf, with 360 ̊ views over London. Bōkan represented a giant leap forward for the global hotel group’s focus on F&B and inspired several international projects across their portfolio.

Alongside my team at the time, we created the brand, interior design, CCG schedule, signage, music, photography style and appointed ex-L’Atelier de Joel Robuchon Chef, Aurelie Altemaire, to take the reins on the food menu. We coordinated all suppliers, were on site for final dressing and supported through all launch event programming.
