Holy Carrot is a beautifully designed restaurant, at the forefront of modern plant-based dining. I began work with this family-owned restaurant group, by auditing their soon-to-close pop-up site in Knightsbridge, arming the team with learnings to inform the evolution and design of the brand for their first permanent site on Portobello Road, which opened June 2024. 

I worked side-by-side with the owners to bring Holy carrot 2.0 to life from market research, competitor analysis, P&L forecasts, concept design oversight, operational design & kitchen planning, project management of the build, suppliers and systems set up, appointment of PR & Marketing consultants, recruitment and onboarding of the senior team, including Executive Chef Daniel Watkins (formerly Acme Fire Cult), prelaunch set up and post-launch ongoing review and support.
